Ok. Black cod is insanely expensive. I have no idea why. But when I can, I splurge. It’s like having a stellar cut of steak for me. Flaky and fatty and so freaking good. This recipe is the only way I make it.

- 1 lb black cod filets
- 1/4 cup mirin
- 1/4 cup sake
- 1/4 cup white miso paste
- 3 TBSP sugar
In a small pot, add mirin, sugar, sake and miso. Heat on medium and Cook until sugar is dissolved. Let cool.
Cover cod with cool marinade and leave in the fridge for 2-3 days.
Preheat oven to 400.
Heat a cast iron pan over high heat. Add a little veggie oil and filets (lightly wiped of excess marinade) skin side up. Cook quickly (3 mins) until just browns. Flip and do the same to this side. Place in oven and Cook 5-10 mins until opaque and flaky.
Serve with rice and stir fried veggies. Enjoy!
