Ranch Granola

More Ranch recipes and this one is a staple! It makes approx 50 oz. So get out your Tupperware or reusable zip bags.

Ranch Granola

  • 3 cups steele cut oats
  • 1 cup walnut pieces
  • 1 cup pecan pieces
  • 1 cup chopped almonds
  • 1 cup unsweetened shredded coconut
  • 3/4 sunflower seeds
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 3/4 cup maple syrup
  • pinch of salt
  • 1/2 cup water
  • 2/3 cup flax meal
  • 1/3 cup dried blueberries
  • 5 dried dates chopped
I didn’t have walnuts so subbed pistachios

Preheat oven to 275 degrees.

In a bowl, whisk together the water and flax meal. Set aside until the mixture thickens, about 10 minutes. Once thick, add the maple syrup and whisk to combine.

In a large bowl, toss together the oats, nuts, seeds, coconut, salt, cinnamon and nutmeg. Pour the flax/maple mixture over the dry ingredients and mix to evenly coat.

Transfer granola to a parchment or silpat lined baking sheet, spreading it out evenly. Bake for 25 minutes, rotate the pan and bake another 25 minutes. Remove the pan from the oven and carefully flip the granola with a spatula. Bake for another 25 minutes until golden brown.

Let cool completely, then add the dried fruit and mix thoroughly.
