Mussels in Wine Bath

These little babies love garlic and wine. No wonder I love them. This could be an app or dinner. Serve with some crusty bread and feast!

  • 20 mussels. Could be frozen or fresh
  • 6 cloves of garlic, sliced thinly
  • 3 TBSP butter
  • 1/4 cup dry white wine like Sauvignon Blanc
  • 5 sprigs fresh parsley
  • Chili flakes
  • Salt to taste

If using fresh mussels, add them to a ziploc with water to fully submerge and a TBSP of flour. The mussels should spit out any sand or silt they’re hanging on to. One of the worst things is biting into a mollusk and getting grit between your teeth.

In a lidded pan, heat butter over medium heat until melted. Add garlic and Cook for 2 mins. Add mussels and wine and bring to a simmer. Cover and Cook on low until the shells open.

Add chili flakes. Pop in to a bowl and add parsley. Eat with warm crusty bread and don’t forget the extra bowl for the shells!
