Make this when you have a few extra veggies in your fridge that need cooking/eating. Basically, you chop and sauté all the veggies in a pan until they’re cooked to your liking. Then you crumble firm tofu into the pan. Add some smoked paprika (like a lot), a little cumin, onion powder, garlic powder and oregano. If you like spice, add chili flakes or cayenne pepper. Season with salt and pepper to taste. Serve with tortillas, salsa, cilantro, cojita and avocado.
