B A N A N A S – banana muffins

So so so delicious. It might be because I haven’t had any sugar in a few weeks but Dad and LOs loved them.

Banana Muffins

  • 3 ripe bananas, peeled
  • 1 stick of butter, 8 Tbsp, softened
  • 2/3 cup sugar
  • 2 large eggs, room temp
  • 1 tsp vanilla extract
  • 1 1/2 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Semi sweet chocolate chips or pecan pieces and brown sugar

Preheat oven to 350 degrees.

Line muffin tin with parchment liners.

Cream sugar and butter until fluffy. Add beaten eggs and vanilla extract. Add mashed bananas. Mix until blended.

In a separate bowl, add flour, baking soda and salt and mix.

Add wet ingredients to dry and mix until no more dry ingredients.

I split the batch and mixed chocolate chips in one and pecan pieces in another.

Evenly scoop among 12 muffin liners. If doing pecans, sprinkle with a little brown sugar on top.

Bake for 22-25 mins.

Enjoy warm with butter. Mmmmm
