Fresh Strawberry Pie

Before the last of the fresh summer strawberries start to disappear from the farmers market, make this pie. It’s easy and sinfully good.

Fresh Strawberry Pie

  • 1-2 baskets of fresh strawberries, depending on size, cut off stems
  • 1 pie crust, I used one from the local butcher made from duck fat
  • 1 packet French vanilla pudding
  • 1 packet strawberry jello, 3oz
  • 2 TBSP cornstarch
  • 3/4 cup sugar
  • 1 cup water

Make the pie crust according to instructions and bake.

Make pudding according to instructions.

In a small pot, make the strawberry glaze. Combine cornstarch, sugar and water. Bring to a boil until sugar is dissolved. Remove from heat and add jello packet. Stir until that’s dissolved. Let it cool for 15 mins.

Time to assemble the pie! Make sure the crust is cool. Add a 1/2” layer of pudding to bottom of baked crust. Place strawberries cut side down so that their bottoms are sticking up. I usually start at the edge of the pie and place strawberries around the circle and move my way in. Top with the strawberry glaze.

Refrigerate for 3 hours or overnight.

Serve with whipped cream and enjoy!!
